Climate and the tyranny of distance spurred development of efficient methods of refrigeration.
Eugene Nicolle, a brilliant French engineer, in collaboration with Thomas Sutcliffe Mort invented and patented a number of improvements in shipboard refrigeration that permitted development of frozen meat sales to Britain. Ten years of research resulted in 12 patents. In 1879 the Stratheleven carried 40 tons of frozen beef and mutton to England where it was judged of such good quality that it could not be distinguished from freshly killed English beef.
